Despite gaining an XP boost on Veteran mode, your character will be very weak starting out, so it's best to select Adventurer mode. This will allow you to clear the early dungeons faster, which can be a slog on Veteran mode when you have limited skills.
It's important to note that staying on Adventurer mode for too long is detrimental to your progress! You'll want to switch over to Veteran mode at your first power spike so that you can start receiving a juicy 20% xp boost as soon as possible. While there's no set rule for what a power spike is, check below for some class guidelines:

In Diablo 4, you're shooting to reach Level 50 and reach endgame as quickly as possible. The 20% extra experience boost and 15% increased drop rate from Veteran can make a big difference, so if your grind isn't going fast enough on Adventurer, Veteran can be a good choice.
Obviously, Veteran is more challenging, so if you're dying frequently, it might offset the advantage of the experience and drop rate boost. If you're choosing Veteran to try to farm experience faster, then you'll want to consider if you've got the skills to handle it.
You can change the in-game difficulty from the menu any time you start up the game, or at a World Tier statue in town, so don't worry if you decide you need to change your setting later!
