There is no confirmation yet if each button can be remapped in the game. In Dragon's Dogma 1, you can only choose among the preset control schemes, unless you're using a mouse and keyboard.
Given that Dragon's Dogma 2 is built using the modern RE Engine, it is likely that the controls can be remapped in the System Menu to suit your preferences.
